Do you have picky eaters at home? Mine have become IMPOSSIBLE lately and to say it drives me crazy is an understatement. So I vowed to alter a yummy treat that we could all enjoy and that I wouldn’t feel guilty about giving to them by the pound, yep, they could eat that much of it!
These “donuts” have been adjusted a few times and I think I’ve finally gotten them down to where I want them. There are a few substitutions you could make that shouldn’t alter them too much – I’ll be sure to include them too.
My two favorite pans lately have been my donut pan and my cake pop or donut holes pan, they make eating healthy foods so much more fun and are great for creating fun treats – I’ll share my sons 3rd birthday donuts with you below as well! Grab my donut pan here and the cake pop/donut hole pan here.

Zucchini Banana Bread “Donuts”
Ingredients
- 4 eggs
- 1/4 cup white sugar
- 1/4 cup light brown sugar
- 1/2 cup oil (vegetable or melted coconut)
- 3/4 cup maple syrup (or honey if preferred)
- 1 tbsp vanilla
- 1 1/4 cup coconut flour
- 3/4 cups flour
- 1 tsp baking soda
- 1/4 tsp cream of tartar (or baking powder)
- 1 tsp salt
- 2 tsp cinnamon
- 2 ripe bananas (mashed)
- 1 large zucchini (shredded)
OPTIONAL:
- 23 g protein powder of your choice (we used Tone It Up Cinnamon Roll- any cinnamon or vanilla flavor would work- a plant based protein keeps it dairy free, if you are not concerned about being dairy free, any protein can be used) – this is also optional to add an extra boost of protein
- Hefty several dashes of ENOF

Directions
- Preheat oven to 350 degrees and grease donut pans with your choice of spray/oil
- Combine eggs, sugars, oil, syrup and vanilla in a large bowl.
- In a medium bowl combine flours, baking soda, cream of tartar, salt, cinnamon and optional items.
- In another bowl combine mashed bananas and shredded zucchini.
- Blend dry ingredients into egg and sugar mixture, about 1/3 at a time.
- Add bananas and zucchini and blend well, about 30 seconds.
- Pour mixture into pans and bake at 350 degrees for donut pan (25 minutes) cake pop/donut hole pan (20 minutes). In a loaf pan, this takes about 45 minutes.
Servings: 55 donut holes or 15 donuts
