Your New Favorite Oatmeal Bars

If you’ve seen the well-known oatmeal ball varieties floating around, these won’t seem all that unfamiliar but as someone who has been making oatmeal balls for years and switched to these bars, I promise these are a game changer! They are packed full with good things and are a bit less messy than rolling a bunch of balls of oatmeal and peanut butter.

Ingedients – SHOP INGREDIENTS HERE

2 cups of quick oats
1 cup of peanut butter (or alternative)
1/2 cup maple syrup or honey
1 scoop of your favorite protein powder
1/2 cup of chocolate chips
2 tbsp brown sugar

In a large bowl, mix together your oats and protein powder first. Once mixed, add in peanut butter and honey or maple syrup and mix until all ingredients are wet and there is no more powder. If very crumbly, add a tablespoon of peanut butter or honey until not wet but moldable.

Line a baking pan or sheet with parchment paper and press oatmeal mixture into a 1/2 thick slab, you can cover with a second sheet of parchment paper and push down firmly to avoid getting too messy. Freeze for 5 minutes.

In a microwave safe bowl, melt chocolate chips in 30 second increments. Stir until smooth and dripping and pour over oatmeal mixture spreading smoothly until only the edges are not covered. Sprinkle with brown sugar and freeze for 5-10 minutes.

Remove from freezer, cut square or rectangle-shaped bars and store in a glass container in the fridge (these will go quickly!).
