Easy & Delicious Mini Banana Muffins

These muffins are a favorite in our house and they really are so simple and quick to whip up! Mini muffins cook so quickly are great to have on hand for at home, on the go or as a school snack!

Ingredients

For Muffins: (makes 24 mini muffins)
2 ripe bananas
2 large eggs
2 tsp olive oil
1/2 tsp baking soda
1 tsp vanilla extract
2 tsp brown sugar splenda blend (brown sugar is fine, too!)
1/2 cup all purpose flour
1/2 cup oats
1/4 golden sugar (white sugar is fine, too!)

For topping:
1/4-1/2 cup oats
4 tsp brown sugar splenda blend
1 tsp butter

Directions

Preheat oven to 350 degrees.

In a large bowl, mash bananas well and add eggs. Add olive oil, vanilla extract, baking soda and brown sugar and mix until incorporated. In a small bowl, combine flour, oats and sugar and incorporate into wet mixture.

Spray mini muffin pan with olive oil spray and drop one tablespoon of mix into each. This is my absolute favorite scoop that I use for cookies, pancakes, muffins you name it! Top each muffin with the topping mixture and bake for 15 minutes.
